Riding the wave seems like a challenge, how do you judge which companies are going to make it - without having the diversification that VC's do?

Join a start up = high risk, high reward
Join a mature company = less risk, less reward
The interesting thing for me is, people perceive a stable to as less risk - even though there is risk.
My experience (excluding startups I owned) has been that startup = high risk, low reward, with a tiny chance of a massive upside.
